Ingredients

  • 1 cup low -fat cottage cheese
  • 2 large egg s
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 cup sugar -free pizza sauce
  • 1/2 cup shredded low-moisture mozzarella cheese
  • 12 slices turkey pepperoni

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a rimmed baking sheet with parchment paper lightly coated with non-stick spray.
  • Combine cottage cheese, eggs, garlic powder, dried oregano, and black pepper in a high-speed blender or food processor.
  • Blend on high until the mixture is completely smooth and liquid with no visible curds.
  • Pour the batter onto the prepared baking sheet and spread with a spatula into a rectangle or circle approximately 1/4 inch thick.
  • Bake the crust for 35 to 40 minutes until the edges are deep golden brown and the center is set and firm to the touch.
  • Remove from the oven and allow the crust to cool on the pan for at least 10 minutes; this step is critical for the structural integrity of the flatbread.
  • Spread pizza sauce over the cooled crust and sprinkle evenly with mozzarella cheese and pepperoni slices.
  • Return to the oven for 5 to 7 minutes, or until the cheese is melted and bubbly, then let rest for 5 minutes before slicing.
