Turkey Sweet Potato Bake - Prepper Protein

Ingredients

  • 2 lbs lean ground turkey (93/7)
  • 3 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 2 tablespoons extra virgin olive oil, divided
  • 1 large yellow onion, diced
  • 3 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 2 cups fresh baby spinach, packed
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  • Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius).
  • Toss cubed sweet potatoes with 1 tablespoon of olive oil on a large rimmed baking sheet.
  • Roast sweet potatoes for 20 to 25 minutes, or until fork-tender and slightly caramelized.
  • While potatoes roast, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the diced onion and sauté for 5 minutes until translucent.
  • Add the ground turkey to the skillet, cooking and breaking it into crumbles until fully browned.
  • Stir in the minced garlic, salt, pepper, smoked paprika, and oregano; cook for 2 minutes.
  • Combine the turkey mixture and roasted sweet potatoes in a 9x13 inch baking dish.
  • Stir in the fresh baby spinach until it begins to wilt from the residual heat.
  • Top with shredded sharp cheddar cheese and return to the oven for 10 minutes until the cheese is melted.
  • Allow the bake to rest for 5 minutes before portioning into meal prep containers.
