Equipment

  • Large bowl
  • Grill pan or skillet
  • Knife and chopping board

Ingredients

  • 1 lb extra lean ground turkey 93/7 recommended
  • 1 cup fresh baby spinach finely chopped
  • 1/2 cup crumbled feta cheese
  • 1 egg binder
  • 2 cloves garlic minced
  • 1/4 cup breadcrumbs
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Burger buns optional
  • Toppings of choice e.g., sliced tomatoes, red onion, cucumber slices, tzatziki sauce

Instructions

  • Chop the spinach finely to avoid large leaves spilling out.
  • In a large bowl, combine ground turkey, chopped spinach, feta cheese, egg, garlic, breadcrumbs, oregano, salt, and pepper. Mix gently — do not overmix.
  • Form the mixture into 4 patties, slightly larger than your buns to allow for shrinkage while cooking.
  • Heat a grill pan or skillet over medium-high heat. Cook patties for 5-6 minutes per side until the internal temperature reaches 165°F (74°C).
  • Let the burgers rest for 2-3 minutes before serving to allow juices to redistribute.

Notes

Avoid flattening burgers during cooking to keep them juicy.
Use 93/7 ground turkey for moisture; very lean turkey can dry out the burgers.
These can be served with whole wheat buns or over a salad for a lighter meal.
Raw patties can be refrigerated for 1 day or frozen for up to 3 months with parchment paper between patties. Cooked burgers store well for 3-4 days in the fridge.
