Salmon Sushi Bake

Ingredients

  • 2 cups cooked short-grain sushi rice
  • 2 tablespoons seasoned rice vinegar
  • 1 lb cooked salmon fillet, flaked
  • 0.5 cup Japanese mayonnaise
  • 2 tablespoons sriracha sauce
  • 4 oz cream cheese, softened
  • 2 tablespoons furikake seasoning
  • 1 tablespoon unagi sauce
  • 1 stalk green onion, thinly sliced
  • 1 pack roasted nori sheets

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • In a bowl, mix cooked sushi rice with rice vinegar and press firmly into an 8x8 inch baking dish.
  • Sprinkle 1 tablespoon of furikake seasoning over the rice base.
  • In a separate bowl, combine flaked salmon, Japanese mayonnaise, sriracha, and softened cream cheese until integrated.
  • Spread the salmon mixture evenly over the rice layer in the baking dish.
  • Bake for 15 to 20 minutes until the topping is heated through and lightly browned on top.
  • Drizzle with unagi sauce and sprinkle the remaining furikake and green onions on top.
  • Serve warm with roasted nori sheets for scooping and assembly.
