Roasted Sweet Potato Rounds with Honey Feta

Ingredients

  • 2 large sweet potatoes, scrubbed and sliced into 1/2-inch rounds
  • 2 tablespoons extra -virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons hone y
  • 1 teaspoon fresh thyme leaves

Instructions

  • Preheat the oven to 400 degrees Fahrenheit (205 degrees Celsius) and line a baking sheet with parchment paper.
  • Place sweet potato rounds in a large mixing bowl and toss with olive oil, salt, and pepper until evenly coated.
  • Arrange the rounds in a single layer on the prepared baking sheet, ensuring they do not overlap.
  • Roast in the center of the oven for 15 minutes.
  • Remove the tray and flip each round using a spatula or tongs.
  • Return to the oven and roast for an additional 10 to 15 minutes until the potatoes are tender and the edges are golden brown.
  • Remove from the oven and immediately sprinkle crumbled feta cheese over each round while warm.
  • Drizzle honey over the assembled rounds and garnish with fresh thyme leaves before serving.
