Ingredients
  

  • 2 cups Rice Krispies cereal
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey
  • 1/4 cup mini chocolate chips
  • 2 tbsp chia seeds optional
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • In a large mixing bowl, combine peanut butter, honey, vanilla, and a pinch of salt.
  • Stir in Rice Krispies cereal until evenly coated.
  • Mix in mini chocolate chips and chia seeds (if using).
  • Refrigerate mixture for 30 minutes to firm up.
  • Roll the mixture into 1-inch balls using your hands.
  • Store in the fridge in an airtight container for up to 1 week.

Notes

These bites are great to make ahead and perfect for lunchboxes or gym snacks.
You can double the recipe and freeze half — they defrost in 10 minutes.
Variations include: adding caramel & sea salt, protein powder, shredded coconut, or more chocolate chips.
