Ingredients

  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring

For Coating

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • In a separate bowl, mix the sugar and vegetable oil until combined.
  • Add the eggs, vanilla extract, and red food coloring; mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until it’s all combined.
  • Chill the dough in the refrigerator for at least 30 minutes.

Baking

  • Roll the chilled dough into balls and coat them in powdered sugar.
  • Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough well; this helps the cookies maintain their shape. Use fresh ingredients for the best flavor. Don’t overbake the cookies; they should be soft in the center.
