  • 1 cup rolled oats (gluten free if desired)
  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (sub maple syrup for vegan)

Instructions
 

Preparation

  • Combine all ingredients in a large bowl.
  • Using a small cookie scoop, scoop out approximately 24 small balls.
  • Use your hands to roll each scoop into a ball and place them on a plate.
  • Freeze for 10 minutes to help them hold their shape.

Notes

Use a cookie scoop for uniform size. Adjust the sweetness by adding more or less honey. If you prefer chocolate, add mini chocolate chips. Use any nut butter you like, such as peanut or sunflower seed butter. Roll them in shredded coconut for a fun twist.
