  • 2 pieces eggs
  • 1/2 cup milk Almond milk or oat milk can be used for a dairy-free version.
  • 1 teaspoon cinnamon Adjust spices to taste.
  • 1/2 teaspoon nutmeg Can substitute with pumpkin pie spice.
  • 1 tablespoon vanilla extract
  • Butter for cooking Use as needed to grease the skillet.
  • Maple syrup and toppings (optional) Toppings can include whipped cream, nuts, or fruits.

Preparation

  • In a bowl, whisk together the pumpkin puree, eggs, milk, cinnamon, nutmeg, and vanilla extract until smooth.
  • Heat a skillet over medium heat and add a bit of butter.

Cooking

  • Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side.
  • Cook the soaked bread in the skillet for 2-3 minutes on each side, or until golden brown.
  • Serve warm with maple syrup and your favorite toppings.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Freeze cooked slices for up to a month. Reheat in a toaster or microwave.
