Ingredients
  

  • 1 cup natural peanut butter smooth or crunchy
  • 2 scoops vanilla protein powder about 60g
  • 1/3 cup coconut sugar or brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1/3 cup mini chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, mix the peanut butter, egg, vanilla extract, and sugar until smooth.
  • Add protein powder, baking soda, and salt. Stir until just combined.
  • Fold in chocolate chips if using.
  • Scoop dough into 12 balls and slightly flatten each one on the baking sheet.
  • Bake for 10-12 minutes or until edges are set.
  • Let cookies cool on the pan for 5 minutes before transferring.

Notes

Use a high-quality protein powder for best flavor.
Dough will be thick due to protein powder—do not add extra liquid.
Cookies stay soft for 3–4 days stored airtight.
You can freeze the dough and bake fresh cookies later.
