Mediterranean Ground Beef Stir Fry

Ingredients

  • 1 lb lean ground beef
  • 2 tbsp extra virgin olive oil
  • 1 medium red onion, diced
  • 2 medium zucchini , sliced into half-moons
  • 1 red bell pepper, diced
  • 3 cloves garlic , minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • 0.5 tsp sal t
  • 0.25 tsp black pepper
  • 0.25 cup crumbled feta cheese
  • 1 tbsp fresh lemon juice

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground beef and cook until browned and crumbled, approximately 6 minutes.
  • Drain excess fat from the skillet.
  • Add red onion and red bell pepper; sauté for 3 minutes until softened.
  • Incorporate zucchini and garlic, cooking for 4 minutes until tender.
  • Stir in cherry tomatoes, oregano, salt, and pepper; cook for 2 minutes until tomatoes soften.
  • Remove skillet from heat and stir in fresh lemon juice.
  • Garnish with crumbled feta cheese and serve immediately.
