Mediterranean Breakfast Sandwich - Prepper Protein

Ingredients

  • 2 slices whole grain bread
  • 2 large egg s
  • 2 tablespoons hummu s
  • 1/4 cup fresh baby spinach
  • 2 thick slices of tomato
  • 1 tablespoon crumbled feta cheese
  • 5 pitted kalamata olives, sliced
  • 1 teaspoon olive oil
  • 1/4 teaspoon dried oregano
  • 1 pinch sea salt
  • 1 pinch cracked black pepper

Instructions

  • Toast the whole grain bread slices until golden brown and firm.
  • Heat olive oil in a small non-stick skillet over medium heat.
  • Crack eggs into the skillet and cook until whites are set and yolks are cooked to desired level of doneness.
  • Spread one tablespoon of hummus evenly across each slice of toasted bread.
  • Layer baby spinach, tomato slices, and sliced kalamata olives on the bottom slice of bread.
  • Place the cooked eggs directly on top of the vegetables.
  • Sprinkle crumbled feta cheese, dried oregano, salt, and black pepper over the eggs.
  • Close the sandwich with the remaining slice of bread and slice diagonally before serving.
