  • 2 large Chicken Breasts, boneless, skinless, sliced thinly
  • To taste Salt and Pepper
  • 2 tbsp Olive Oil, for searing
  • 3 cloves Garlic, minced
  • 1/3 cup Sun-Dried Tomatoes, chopped
  • 1/2 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 tsp Italian Seasoning
  • 1/2 tsp Crushed Red Pepper Flakes, optional for spice
  • 8 oz Pasta, such as penne, rigatoni, or fettuccine
  • Fresh Basil, for garnish

Preparation

  • Season the sliced chicken breasts with salt and pepper.
  • Heat olive oil in a pan over medium heat. Add the chicken and sear until golden brown.
  • Remove the chicken, then add garlic and sun-dried tomatoes to the same pan.

Cooking

  • Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan, and Italian seasoning until combined.
  • Meanwhile, cook the pasta according to package instructions until al dente.
  • Return the chicken to the sauce and mix well, then combine with the pasta.

Serving

  • Garnish with fresh basil before serving.

Notes

Leftovers can be stored in the fridge for 3-4 days or frozen for about 2 months. Reheat it in a pan over low heat, adding a splash of chicken broth or cream to restore its creamy texture. Don't overcook the chicken and adjust the creaminess to your liking.
