Ingredients

  • 1 lb 99% lean ground turkey
  • 8 small corn tortillas
  • 1 tablespoon low -sodium taco seasoning
  • 1/2 cup wate r
  • 1 cup shredded romaine lettuce
  • 1/2 cup diced roma tomatoes
  • 1/2 cup sals a
  • 1/4 cup non -fat Greek yogurt
  • 1/4 cup reduced -fat shredded cheddar cheese

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Place corn tortillas in a single layer on a baking sheet and bake for 4-5 minutes per side until crisp and golden.
  • In a non-stick skillet over medium-high heat, cook the ground turkey until browned and no longer pink, breaking it into small crumbles.
  • Stir in the taco seasoning and water, then reduce heat to low and simmer for 5 minutes until the liquid has evaporated.
  • To assemble, place a portion of the seasoned turkey onto each toasted tortilla.
  • Top with shredded lettuce, diced tomatoes, shredded cheese, salsa, and a dollop of Greek yogurt as a sour cream substitute.
