Hot Honey Feta Chicken

Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1/3 cup wildflower honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon garlic powder
  • 4 ounces crumbled feta cheese
  • 1 tablespoon fresh chopped parsley

Instructions

  • Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and garlic powder.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat.
  • Place the chicken in the skillet and sear for 6 to 8 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit.
  • While the chicken cooks, whisk together the honey, apple cider vinegar, and red pepper flakes in a small bowl.
  • Once the chicken is cooked, reduce the heat to low and pour the honey mixture over the chicken in the skillet.
  • Simmer the sauce for 2 minutes, spooning the glaze over the chicken repeatedly until it thickens.
  • Remove from heat and immediately top each chicken breast with crumbled feta cheese.
  • Garnish with fresh parsley and serve.
