High-Protein Tuna White Bean Salad

Ingredients

  • 1 can (5 oz) albacore tuna in water, drained
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1/4 cup red onion, finely diced
  • 1/2 cup English cucumber, diced
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 2 tablespoons extra -virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to create the dressing.
  • In a medium mixing bowl, combine the drained tuna and cannellini beans.
  • Add the diced red onion, cucumber, and chopped parsley to the bowl.
  • Pour the dressing over the tuna and bean mixture.
  • Toss gently to combine, breaking up larger chunks of tuna as desired.
  • Serve immediately or refrigerate for up to 30 minutes to allow flavors to meld.
