High-Protein Cottage Cheese Nacho Bowl

Ingredients

  • 1 cup low -fat cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 8 oz lean ground beef or ground turkey
  • 1 tbsp taco seasoning
  • 2 oz baked tortilla chips
  • 1/4 cup diced tomatoes
  • 1/4 cup pickled jalapeƱos
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a blender or food processor, combine cottage cheese, shredded cheddar, garlic powder, and onion powder until smooth.
  • In a skillet over medium-high heat, brown the ground meat until cooked through, then drain excess fat.
  • Add taco seasoning and a splash of water to the meat and simmer for 2 minutes.
  • Gently heat the blended cheese mixture in a saucepan over low heat until warm, stirring constantly to prevent curdling.
  • Divide tortilla chips into two bowls.
  • Top the chips with the seasoned meat and pour the warm cottage cheese sauce over the top.
  • Garnish with diced tomatoes, jalapeƱos, and cilantro before serving.
