Ingredients

  • 100 g cooked turkey sausage crumbles
  • 0.5 cup canned black beans, rinsed and drained
  • 0.5 cup fresh spinach, chopped
  • 0.25 cup shredded cheddar cheese
  • 0.25 cup sals a
  • 0.5 medium avocado , sliced
  • 0.25 teaspoon kosher salt
  • 0.125 teaspoon black pepper
  • 1 teaspoon olive oil

Instructions

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add turkey sausage and black beans to the skillet, sautéing for 4 minutes until heated through.
  • Add chopped spinach and cook for 1 minute until wilted.
  • Whisk eggs with salt and pepper in a small bowl, then pour the mixture into the skillet.
  • Gently scramble the eggs with the sausage and bean mixture until the eggs are just set.
  • Stir in the shredded cheddar cheese until melted and incorporated.
  • Divide the mixture equally into two serving bowls.
  • Top each bowl with fresh salsa and avocado slices.
