High Protein Beef Quesadilla

Ingredients

  • 300 g lean ground beef (90/10)
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 large whole wheat tortillas
  • 1 cup shredded low-fat mozzarella cheese
  • 2 tbsp non -fat Greek yogurt
  • 1 tbsp olive oil

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground beef and cook until browned, breaking it into small crumbles with a spatula.
  • Drain any excess fat from the skillet and stir in the black beans, cumin, chili powder, garlic powder, salt, and pepper.
  • Cook for 2 minutes to allow flavors to meld, then remove the beef mixture from the skillet and set aside.
  • Wipe the skillet clean and return to medium heat.
  • Place one tortilla in the skillet and sprinkle 1/4 cup of cheese on one half.
  • Top the cheese with half of the beef and bean mixture, then sprinkle another 1/4 cup of cheese over the beef.
  • Fold the tortilla in half and press down firmly.
  • Cook for 3 minutes per side until the tortilla is golden brown and the cheese is fully melted.
  • Repeat for the second tortilla, then slice into wedges and serve with Greek yogurt.
