Ingredients

  • 2 slices sprouted grain or whole wheat bread
  • 1/2 cup low -fat cottage cheese
  • 1/2 cup fresh blueberries
  • 1 tablespoon balsamic glaze
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon sliced almonds
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon lemon zest

Instructions

  • Toast the bread slices in a toaster or oven until golden and crisp.
  • While bread toasts, combine blueberries, balsamic glaze, and honey in a small bowl. Macerate slightly with a fork.
  • Place the cottage cheese in a small blender or food processor and pulse until smooth and creamy.
  • Spread the whipped cottage cheese evenly across the two slices of toast.
