Ingredients
  

Dry Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup almond milk (or any milk of choice) Use unsweetened variety.
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

For Greasing

  • as needed cooking spray or oil For greasing the muffin tin.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  • In a mixing bowl, combine the flour, coconut sugar, baking powder, cinnamon, and salt.
  • In another bowl, mix the almond milk, applesauce, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fill each muffin cup until about 3/4 full.

Baking

  • Bake for 10-12 minutes or until a toothpick comes out clean.

Finishing Touch

  • Allow to cool slightly, then toss the churro bites in a cinnamon sugar mixture if desired.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for about three days. For freezing, place in a freezer-safe bag for up to a month. Reheat in the microwave for about 10-15 seconds or enjoy cold.
