For the seasoned ground beef:
- 1 lb ground beef 80/20
- 1 small onion diced
- 1 packet taco seasoning or homemade – see notes
- 1/2 cup water
- For the rice:
- 2 cups cooked white or brown rice
- 1/4 cup salsa
- Lime juice to taste
Toppings and sides:
- 1 5.4 oz can black beans, drained and rinsed
- 1 cup corn frozen, canned, or fresh
- 1 cup shredded cheese cheddar or Mexican blend
- 1 cup lettuce chopped
- 1/2 cup diced tomatoes
- 1 avocado sliced
- 1/2 cup sour cream
- Salsa to taste
- Hot sauce optional
Cook the beef:
In a large skillet over medium-high heat, sauté the diced onion for 3-4 minutes until soft. Add the ground beef and cook until browned, about 6–8 minutes, breaking it up as it cooks. Drain excess fat, then stir in taco seasoning and water. Simmer for 5 minutes until the sauce thickens.
Prep the toppings:
While beef is simmering, prep toppings: chop lettuce, dice tomatoes, slice avocado. Warm the beans in the microwave if desired.
Assemble the bowls:
Start with a layer of rice, then add seasoned beef. Top with beans, corn, cheese, lettuce, tomatoes, avocado, sour cream, salsa, and hot sauce as desired.
