Garlic Parmesan Chicken Meatloaf

Ingredients

  • 2 lbs ground chicken
  • 1/2 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs , lightly beaten
  • 4 cloves garlic , minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/4 cup whole milk
  • 1/2 cup marinara sauce

Instructions

  • Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a 9x5 inch loaf pan with parchment paper.
  • In a large mixing bowl, combine the ground chicken, grated parmesan, breadcrumbs, minced garlic, eggs, parsley, oregano, salt, and pepper.
  • Add the milk and mix by hand until all ingredients are just incorporated; avoid over-mixing to maintain a tender texture.
  • Transfer the mixture into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 40 minutes in the center of the oven.
  • Remove the pan and spread the marinara sauce evenly over the top of the meatloaf.
  • Return to the oven and bake for an additional 10 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
  • Allow the meatloaf to rest for 10 minutes before slicing to ensure the juices redistribute.
