Preparation

  • In a slow cooker, combine the beef, halved potatoes, salt, pepper, thyme, and paprika.
  • In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Pour the garlic butter over the beef and potatoes, stirring to coat.

Cooking

  • Cover and cook on low for 6-8 hours, or until the beef is tender and potatoes are cooked through.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can freeze portions for up to 3 months. Thaw overnight in the fridge before reheating.
