Fluffy Baked Cottage Cheese Eggs

Ingredients

  • 8 large egg s
  • 1 cup small -curd cottage cheese (4% milkfat)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon baking powder
  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons fresh chives, minced

Instructions

  • Preheat oven to 350°F (175°C) and grease a 2-quart baking dish or four 8-ounce ramekins.
  • In a large mixing bowl, whisk the eggs until the yolks and whites are fully integrated.
  • Fold in the cottage cheese, shredded cheddar cheese, sea salt, black pepper, and baking powder.
  • Stir in the melted butter until the mixture is homogenous.
  • Pour the egg mixture into the prepared baking dish.
  • Bake for 25 to 30 minutes, or until the eggs are puffed and the center is just set.
  • Garnish with minced chives and serve immediately while aerated.
