  • 12 slices baguette , 1/2-inch thick
  • 1 tablespoon extra -virgin olive oil
  • 1 cup small -curd cottage cheese
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground black pepper
  • 4 ounces cold -smoked salmon, sliced into strips
  • 1 tablespoon fresh dill, chopped

Instructions

  • Preheat oven to 400°F (200°C).
  • Arrange baguette slices on a baking sheet and brush tops lightly with olive oil.
  • Toast in the oven for 5 minutes or until edges are golden brown and crisp.
  • In a small mixing bowl, combine the cottage cheese, lemon zest, and black pepper.
  • Spread approximately 1 tablespoon of the cottage cheese mixture onto each warm crostini.
  • Top each crostini with a portion of smoked salmon, folding the strips for height.
  • Garnish with fresh dill and serve immediately to maintain texture.
