Ingredients
  

  • 1 lb boneless skinless chicken breast, chopped into bite-sized pieces
  • 4 cups fresh broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup chicken broth divided
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp cornstarch
  • Salt and pepper to taste
  • 2 cups cooked rice optional, for serving

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper. Add to skillet and cook for 5–6 minutes, until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add broccoli and a splash of chicken broth. Cover and steam for 3–4 minutes, until bright green and tender.
  • Meanwhile, whisk together remaining chicken broth, soy sauce, honey, and cornstarch in a bowl.
  • Return chicken to skillet with broccoli. Pour in the sauce and toss everything to coat.
  • Cook for another 2–3 minutes until the sauce thickens slightly.
  • Serve over cooked rice or enjoy on its own.

Notes

Do not overcook the broccoli; it should be slightly firm for best texture.
You can use tamari instead of soy sauce for a gluten-free option.
Add fresh ginger, red pepper flakes, or bell pepper for a stir-fry twist.
Make a cheesy casserole by mixing in rice, cheese, and cream of mushroom soup, then bake.
