Main Ingredients

  • 2 pounds potatoes, diced Cut into even sizes for uniform cooking.
  • 1 pound kielbasa, sliced Use turkey kielbasa for a lighter option.
  • 1 cup cheddar cheese, shredded Sprinkle on top 30 minutes before serving.
  • 1 cup cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup milk For creaminess.
  • 1 medium onion, chopped Add for flavor.
  • 1 teaspoon garlic powder Enhances the flavor.
  • Salt and pepper to taste Adjust to personal preference.

Preparation

  • Grease the inside of the crockpot.
  • Layer the diced potatoes at the bottom.
  • Add the sliced kielbasa on top of the potatoes.
  • In a bowl, mix the cream of chicken soup, milk, chopped onion, garlic powder, salt, and pepper.
  • Pour the mixture over the potatoes and kielbasa.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, sprinkle cheddar cheese on top and cover until melted.

Notes

This dish is great on its own or can be served with a fresh salad or warm bread. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to a month.
