Ingredients

  • 1 cup low -fat cottage cheese
  • 2 large egg s
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour
  • 60 grams vanilla whey protein powder
  • 1/4 cup erythritol sweetener
  • 1 teaspoon baking powder
  • 1/4 teaspoon sal t
  • 1/3 cup semi -sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.
  • Process the cottage cheese, eggs, and vanilla in a blender or food processor until the mixture is completely smooth and no curds remain.
  • In a medium mixing bowl, whisk together the oat flour, protein powder, sweetener, baking powder, and salt.
  • Incorporate the processed wet cottage cheese mixture into the dry ingredients and stir until a uniform, thick batter forms.
  • Fold the chocolate chips into the batter using a spatula.
  • Drop 12 equal mounds of dough onto the prepared baking sheet, leaving space between each, and flatten slightly with the back of a spoon.
  • Bake for 12 to 15 minutes or until the cookies are firm to the touch and the edges are lightly golden.
  • Remove from the oven and allow the cookies to cool on the baking sheet for at least 10 minutes to set properly before serving.
