Ingredients

  • 1 cup low -fat cottage cheese
  • 2 large egg s
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 30 grams chocolate whey protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sal t
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • Place the cottage cheese, eggs, maple syrup, and vanilla extract into a high-speed blender.
  • Process the mixture until completely smooth and no visible curds remain.
  • In a large mixing bowl, whisk together the almond flour, cocoa powder, protein powder, baking powder, and salt.
  • Pour the blended liquid ingredients into the dry mixture and stir until fully incorporated.
  • Fold in half of the dark chocolate chips into the batter.
  • Pour the batter into the prepared baking pan and spread evenly with a spatula.
  • Sprinkle the remaining chocolate chips over the surface of the batter.
  • Bake for 25 minutes or until the edges are set and a toothpick inserted into the center comes out with only a few moist crumbs.
  • Allow the brownies to cool completely in the pan for at least 30 minutes to ensure they set properly before slicing into 9 squares.
