Ingredients

  • 1 cup low -fat cottage cheese
  • 1/4 cup marinara sauce, low sugar
  • 1/4 cup shredded part-skim mozzarella cheese
  • 10 slices mini pepperoni
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/8 tsp red pepper flakes

Instructions

  • Place the cottage cheese into a microwave-safe bowl.
  • Stir the garlic powder and dried oregano into the cottage cheese until evenly distributed.
  • Spread the marinara sauce in a uniform layer over the top of the cottage cheese base.
  • Distribute the shredded mozzarella cheese evenly over the marinara sauce.
  • Arrange the pepperoni slices and red pepper flakes on top of the cheese layer.
  • Microwave on high for 60 to 90 seconds, or until the mozzarella is fully melted and bubbly.
  • Allow the bowl to rest for 60 seconds to let the temperature equalize before serving.
