  • 2 cups small curd cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 cups fresh baby spinach, chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  • Preheat oven to 375 degrees Fahrenheit and grease a 9x9 inch baking dish.
  • In a large mixing bowl, whisk the eggs until the yolks and whites are fully integrated.
  • Stir in the cottage cheese, shredded cheddar cheese, chopped spinach, and spices until evenly distributed.
