Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large mixing bowl, combine mashed bananas, blended cottage cheese, eggs, egg whites, vanilla, and maple syrup until well incorporated.
  • In a separate bowl, whisk together oat flour, protein powder, baking soda, cinnamon, and salt.
  • Gently fold the dry ingredients into the wet mixture until no dry streaks remain, being careful not to over-mix.
  • Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
  • Bake for 45 to 55 minutes, or until a skewer inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
