  • 1 large egg Large egg for binding
  • ½ cup unsalted butter, melted Butter should be melted for ease of mixing
  • ¼ cup honey For sweetness; can be swapped with maple syrup
  • 1 teaspoon vanilla extract Adds flavor
  • 1 cup all-purpose flour Can be substituted with almond flour for gluten-free
  • 1 cup light brown sugar, packed Provides sweetness and moisture
  • ½ teaspoon salt Enhances flavors
  • 1 teaspoon ground cinnamon, divided Use fresh for best flavor
  • 3 tablespoons granulated sugar (for topping) Mixed with cinnamon for topping

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  • In a bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the egg, honey, and vanilla extract; whisk until well combined.
  • Stir in the flour, salt, and ½ teaspoon of cinnamon until just mixed.
  • Pour the batter into the prepared pan.
  • In a small bowl, mix the granulated sugar and remaining ½ teaspoon of cinnamon, then sprinkle over the top of the batter.

Baking

  • Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool completely in the pan before cutting into squares.

Notes

Serve these blondies with a scoop of vanilla ice cream or a drizzle of caramel sauce. Store in an airtight container at room temperature for up to four days or freeze for up to three months.
