Filling Ingredients

  • ½ cup brown sugar, packed For a sweet filling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  • In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Prepare the filling by combining brown sugar and cinnamon in a small bowl.
  • Spread half of the dough on parchment paper, sprinkle with filling, and roll it up tightly.
  • Slice into rounds and place on a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until golden brown.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze them for up to three months in a freezer bag.
