Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1/4 cup fresh lime juice
  • 2 tablespoons lime zest
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic , minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

  • In a medium bowl, whisk together lime juice, lime zest, chopped cilantro, minced garlic, olive oil, cumin, salt, and pepper.
  • Place chicken thighs in a large resealable bag or shallow dish and pour the marinade over them, ensuring even coating.
  • Marinate the chicken in the refrigerator for at least 30 minutes or up to 4 hours.
  • Heat a large skillet over medium-high heat with a drizzle of oil.
  • Remove chicken from marinade and sear for 5-7 minutes per side until the internal temperature reaches 165 degrees Fahrenheit.
  • Remove from heat and let rest for 5 minutes before serving or portioning for meal prep.
