Ingredients
  

  • 1 cup fresh strawberries diced
  • 1 cup Greek yogurt vanilla or strawberry
  • 1 cup semi-sweet chocolate chips
  • 1-2 tablespoons coconut oil
  • 1-2 tablespoons honey or maple syrup optional
  • 1/2 teaspoon vanilla extract optional
  • Pinch of sea salt for garnish optional

Instructions
 

  • Dice fresh strawberries into small, uniform pieces.
  • In a mixing bowl, combine diced strawberries with Greek yogurt, honey, and vanilla extract if using. Mix until evenly distributed.
  • Using an ice cream scoop, create 1.5-2 inch clusters on a parchment-lined baking sheet, leaving space between each bite.
  • Freeze for 30 minutes or until completely solid.
  • In a small microwave-safe bowl, combine chocolate chips with coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
  • Let chocolate cool for 3-5 minutes.
  • Working in batches of 3-4 bites, dip each frozen cluster into melted chocolate using a fork. Allow excess to drip off.
  • Place coated bites back on parchment paper.
  • Return to freezer for 5 minutes or let sit on counter until chocolate hardens.
  • Serve immediately or store in refrigerator.
