Using an ice cream scoop, create 1.5-2 inch clusters on a parchment-lined baking sheet, leaving space between each bite.
Freeze for 30 minutes or until completely solid.
In a small microwave-safe bowl, combine chocolate chips with coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
Let chocolate cool for 3-5 minutes.
Working in batches of 3-4 bites, dip each frozen cluster into melted chocolate using a fork. Allow excess to drip off.
Place coated bites back on parchment paper.
Return to freezer for 5 minutes or let sit on counter until chocolate hardens.
