Main ingredients

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 medium red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon kosher salt
  • pinch black pepper
  • 1 package (12 oz) chicken sausage, robust Italian flavor

Instructions
 

Preparation

  • Chop the veggies and add them to a large bowl.
  • Drizzle the veggies with avocado oil and toss to coat.
  • In a smaller bowl, mix the spices with the salt and pepper.
  • Add this blend to the veggies and toss until everything is evenly coated.
  • Slice the sausage into 3/4 inch rounds and mix it in with the veggies.

Cooking

  • Preheat the air fryer to 390 degrees F and spray the basket with cooking spray.
  • Place the veggies and sausage into the air fryer basket in an even layer.
  • Cook for 10 minutes, flipping halfway through.
  • Once cooked, remove from the air fryer and serve warm.

Notes

To keep leftovers fresh, let them cool completely before placing in an airtight container. Store in the fridge for up to 3 days. They can be reheated in the air fryer or microwave. For longer storage, freeze for 2-3 months. You can substitute chicken sausage for turkey sausage for a lighter option.
