  • 1 lb chicken breast, cooked and shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)

Spices

  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste salt and pepper

Garnish

  • to taste chopped cilantro

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, black beans, corn, cooked rice, salsa, cumin, chili powder, salt, and pepper.
  • Pour the mixture into a greased baking dish and spread it evenly.
  • Top with shredded cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool slightly.
  • Garnish with chopped cilantro before serving.

Notes

This casserole can be served with fresh guacamole, sour cream, or a simple salad on the side. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months. Cooked chicken can be prepared ahead of time to save time during assembly. Adjust spices based on your family’s taste.
