Ingredients
  

  • For the Chipotle Mayo:
  • 1/2 cup mayonnaise
  • 2-3 chipotle peppers in adobo sauce finely chopped
  • 1 tablespoon adobo sauce
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • Salt to taste
  • For the Sandwiches:
  • 2 cups cooked chicken breast shredded
  • 1 large ripe avocado sliced
  • 4 slices sturdy bread ciabatta, sourdough, or focaccia
  • 4 slices cheese Colby Jack, Gouda, or pepper jack
  • 2 tablespoons butter softened
  • 1 small red onion thinly sliced (optional)
  • 2-3 peppadew peppers optional
  • Fresh cilantro leaves optional

Instructions
 

  • Make the chipotle mayo: In a small bowl, combine mayonnaise, chopped chipotle peppers, adobo sauce, lime juice, garlic powder, chili powder, and salt. Mix well and set aside.
  • Prepare chicken: In a separate bowl, combine shredded chicken with 2-3 tablespoons of chipotle mayo. Mix gently to coat evenly.
  • Assemble sandwiches: Spread remaining chipotle mayo on one side of each bread slice. On two slices (mayo side up), layer the chicken mixture, avocado slices, cheese, and any optional vegetables. Top with remaining bread slices, mayo side down.
  • Toast sandwiches: Heat a large skillet over medium heat. Butter the outside of each sandwich generously. Cook 3-4 minutes per side until golden brown and cheese is melted.
  • Serve: Let cool 1-2 minutes, then slice diagonally and serve immediately.

Notes

  • Use rotisserie chicken for convenience and extra flavor
  • Choose ripe but firm avocados to prevent mushiness
  • Adjust chipotle peppers to control heat level - start with less if you're sensitive to spice
  • Don't skip buttering the outside for the perfect golden crust
