- 1 cup vanilla protein powder
- 8 oz cream cheese softened
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1/4 cup fresh blueberries
- 2 tbsp coconut flour
- Optional Add-ins:
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 tbsp graham cracker crumbs
- 1 tbsp chopped nuts
In a mixing bowl, beat the softened cream cheese until smooth.
Add the protein powder, honey (or maple syrup), and vanilla extract. Mix well until fully combined.
Fold in the coconut flour until the mixture holds its shape. Add more if the mixture is too wet.
Gently fold in the blueberries. Be careful not to crush them.
Using your hands or a small scoop, form the mixture into 1-inch balls.
Place the bites on a tray lined with parchment paper.
Chill in the fridge for at least 30 minutes until firm.
For a lemony twist, add lemon zest and juice.
For a keto version, replace honey with erythritol and use almond flour instead of coconut flour.
Store in the fridge for 5 days or freeze for up to 2 months.
