Ingredients
  

  • 1 cup vanilla protein powder
  • 8 oz cream cheese softened
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup fresh blueberries
  • 2 tbsp coconut flour
  • Optional Add-ins:
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp graham cracker crumbs
  • 1 tbsp chopped nuts

Instructions
 

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the protein powder, honey (or maple syrup), and vanilla extract. Mix well until fully combined.
  • Fold in the coconut flour until the mixture holds its shape. Add more if the mixture is too wet.
  • Gently fold in the blueberries. Be careful not to crush them.
  • Using your hands or a small scoop, form the mixture into 1-inch balls.
  • Place the bites on a tray lined with parchment paper.
  • Chill in the fridge for at least 30 minutes until firm.

Notes

For a lemony twist, add lemon zest and juice.
For a keto version, replace honey with erythritol and use almond flour instead of coconut flour.
Store in the fridge for 5 days or freeze for up to 2 months.
