Ingredients

  • 1 cup low -fat cottage cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon unsalted butter, melted

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8x8 inch baking dish with melted butter.
  • Place eggs, cottage cheese, salt, pepper, and garlic powder into a blender.
  • Pulse on low speed for 15 to 20 seconds until the mixture is completely smooth and aerated.
  • Pour the egg mixture into the prepared baking dish.
  • Bake for 25 to 30 minutes until the center is set and the edges are lightly golden brown.
  • Remove from oven and let rest for 5 minutes before slicing into squares.
